Good Morning and HAPPY Sunday!!
I used up the last of my strawberries on a rather delicious and semi-healthy breakfast yesterday morning. French Toast with Fresh Strawberries sounded so… umm… boring!! I had to kick it up a bit with the addition of flaked coconut hence, Coconut Crusted French Toast with Fresh Strawberries! 🙂
Although breakfast is the most important meal of the day, it’s the one meal that I usually forego. Unless it’s Sausage, Cheese and Egg McMuffins at my parents, then I’m in! 😉 I must say, although I’ve still not crossed over to being a breakfast fan, this hearty and delicious breakfast left me satisfied and fulfilled till late afternoon! 🙂
Coconut Crusted French Toast with Fresh Strawberries
Flaked Coconut
Bread
2 Eggs (for 1 to 2 slices of bread, add 1 additional egg for each slice of bread thereafter)
Fresh Strawberries, cut into desired size
Cinnamon
Butter
Maple Syrup
Beat egg(s) and add a little cinnamon to taste (I also added a little bit of cream). Dip bread (I used whole wheat), one slice at a time in egg mixture, soaking the bread with egg. Coat both sides of bread with flaked coconut and dust with cinnamon. Heat lightly buttered frying pan over medium heat. Cook bread on each side until golden brown.
Serve with maple syrup and fresh strawberries!
Strawberries aren’t the only fruit that goes well with Coconut Crusted French Toast. Apricots are delicious with it too! Give it a try with fresh banana’s or another fruit of choice! Start your day with a happy belly, don’t do as I do, do as I say ~ eat your breakfast!! 😉 And enjoy your Sunday!
