“Beet It” Salad!

Another Instagram inspired dish, “Beet It” Salad, roasted beets with goat cheese and fresh parsley. Although I’m not much a fan of goat cheese, the creamy richness of the cheese is a must with this salad. Absolutely divine. Especially when served warm. But this salad is just as yummy cold. 🙂

“Beet It” Salad

Fresh Beets (I used 6 beets)
Goat Cheese, chopped
Fresh Parsley, chopped
Olive Oil
Sea Salt
Dried Thyme
Balsamic Vinegar

Preheat oven to 400F degrees.  Wash, peel and cube beets. Place cubed beets on parchment lined baking pan, drizzle with olive oil and season with sea salt, thyme and any other seasonings of your choice.  Roast in oven for 25-30 minutes or until desired doneness level is reached.

Transfer roasted beets to a serving dish, drizzle with balsamic vinegar, garnish with goat cheese and parsley. Enjoy!

  1. We roasted up a bunch of beets over the weekend and I have been eating a basic replica of this salad for the last few days. I love goat cheese in general but really, something about the beets just makes it shine!
