With 4th of July upon us, many are preparing for BBQ’s, pool parties, picnics and family outings to celebrate. If you’re looking for a delicious twist on an old-time American classic, the brownie, give these heavenly confections a try! These cupcakes are rich and chocolate-y and are bound to grab some attention! Warning: make sure to have plenty of ice cold milk on hand! 😉
Peanut Butter Brownie Cupcake
1 package chewy fudge brownie mix
1 (12 oz package) peanut butter chips or 24 miniature peanut butter cups
Fudge Topping (I used Mrs. Richardson’s Hot Fudge 🙂 )
Preaheat oven to 350, line 24 regular muffin cups with cupcake liners. Prepare brownie mix according to package for cake-like brownies. Fill the cups 1/2 full with brownie batter. Place about 1 tbsp peanut butter chips in the center of the batter or press 1 peanut butter cup into the batter in each muffin cup until the batter meets the top edge of the peanut butter cup.
Bake 18-20 minutes, until the cupcakes are set. When they can be handled safely, remove them from the muffin tins and let cool completely on wire racks. Spread fudge topping on top.
OHhh my gosh. PB and brownie belong in the same sentence. This looks sooo good.
