A Chocolate Chip Pie to be Thankful for!

With Thanksgiving quickly upon us, it’s only natural to think about the things we’re thankful for. Though I believe being thankful and not taking for granted the people and things we’re so lucky to be blessed with, should be something we’re cautious of daily. I never pass up the opportunity to let the people who are important to me know how much they mean. I may not always express it with words, but certainly by my actions. 🙂

In addition to the givens (is that a word??) that I’m thankful for – support & unconditional love of family and friends, good health (for my loved ones and myself),  a good job, a weather-resistant roof over my head, fresh food in my fridge, two bratty yet adoring cats, my independence, our military’s faithful resilience (God bless our troops!)… I’m thankful for Chocolate Chip Pie!!!

Mmmmm! PIE!!!! I may be a huge fan of cupcakes, but when it comes down to cake vs. pie, I’ll always reach for a slice of pie! Preferably Apricot, Peach, Berry, Strawberry, Banana Cream, Chocolate Cream, Pecan or Chocolate Chip! Although this pie is extremely easy, I tend to only make it around Thanksgiving, enjoying it for breakfast in the days to follow with a cup of coffee.  (drool)

Chocolate Chip Pie!

Chocolate Chip Pie

2 eggs
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar
1 cup melted butter – cooled
1 cup chocolate chips
1 cup walnuts, chopped (note: I prefer using chopped pecans!)
1 pie shell

Preheat oven to 325.

Beat eggs until foaming.  Add flour, sugar, brown sugar, chocolate chips and walnuts to egg mixture and beat until mixed..  Add cooled butter.  Mix well.  Bake about 1 hour at 325.
