It’s a rare occasion that I have a full Sunday to myself. A Sunday that doesn’t involve at minimum, an hour and a half drive. A Sunday where I have the whole day to fill it with anything I choose.
Of course as soon as I do have a day to myself, what do I do? I turn to my cookbooks and/or cooking magazines for inspiration of course!
A friend of mine gifted me a subscription to Cuisine at Home. I absolutely love perusing the pages, but hadn’t yet tried any of the mouth-watering recipes. That is until yesterday when I found not only a delightfully fabulous (and healthy might I add! 😉 ) recipe for dinner, but also one for lunch and this amazing recipe for Avocado Butter!
Avocado Butter
1 avocado, pitted and peeled
1/2 cup fresh cilantro leaves
2 tablespoons minced scallions
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1/4 teaspoon kosher salt
Puree avocado, cilantro, scallions, lemon juice, olive oil and salt in a food processor until the consistency of butter, 1 minute.
Avocado Butter goes deliciously spread on….
Garlic Bread
1 tablespoon grated Parmesan
1 tablespoon extra-virgin olive oil
1 teaspoon minced garlic
1/4 teaspoon kosher salt
1/4 teaspoon red pepper flakes
*4 slices Italian baguette, 1/2-inch thick
Preheat broiler with oven rack 6 inches from element.
Combine Parmesan, olive oil, garlic, salt and pepper flakes in a bowl. Spread bread with Parmesan mixture and place on a foil-lined baking sheet. Broil bread until lightly toasted, about 1 minute. Serve bread with avocado butter and garnish with jalapeno slices. (I paired the above two recipes with Fish Veracruz en Papillote and left the jalapeno’s off as I garnished my main dish with jalapeno’s.)
*NOTE: the olive oil, Parmesan, salt, red pepper flake mixture only prepares enough for 5 baguette slices at most. However there is far more avocado butter to go around! And quite honestly, although the garlic bread recipe is for 2 servings, once you try it, you wont be stopping at just two slices! I guarantee it!! 😉
Sounds like a lot of trouble. I like to just scoop it out and spread it on, sprinkle a little salt. Yum. Yours looks delicious too. 🙂
It was delicious and creamy! I will admit, any time I have to break out the food processor, I think the same as you, “a lot of trouble”. I love spreading it on some toast with a little salt & pepper ~ heavenly! 🙂
