Another Instagram inspired meal, Roasted Artichokes! I had a pretty rough weekend which felt much longer than it really was. I didn’t have much of an appetite most of the weekend, which is telling in of itself. Come Sunday evening I was yearning for something tasty and hearty, but it had to be something easy as I just didn’t have the energy to prepare a big meal or deal with the clean-up.
As I racked my brain and searched the cupboards and fridge for ideas, it hit me. I had two large artichokes and the steps for preparing Roasted Artichokes courtesy my friend, Jesselee. 🙂
Roasted Artichokes
Artichoke(s)
Olive Oil
Salt
Pepper
Garlic
Lemon
Mayonnaise
Note: all measurements are to taste.
Preheat oven to 375. Trim the stem and leaves of your artichoke(s) and cut in half. Place artichoke halves in a pot of salted water and bring to a boil until semi-soft. In a measuring cup, mix olive oil, minced garlic, salt & pepper, set aside. Drain artichokes and place on a parchment-paper-lined cookie sheet, inside face up. Drizzle with olive oil mixture, additional salt, pepper and a squeeze of lemon. Bake for 20 minutes. Hit with an additional squeeze of lemon and serve with mayonnaise for dipping.
I’m actually not a big fan of mayonnaise, but oddly, I do love it with artichokes. Being I was going for a low-key, low maintenance type of meal, I didn’t “dress up” the mayo, however mayo mixed with minced garlic, lemon juice and fresh herbs would be an amazing compliment to these artichokes! I’m sure of it.
