Celebrate with Rum Cake!

As 2011 wraps up and we prepare to embark on a new year, what better time than now to share my mother’s Rum Cake recipe!! I can’t remember a time when this deliciously moist and rummy cake didn’t grace our holiday dessert spread! I especially love having this cake for breakfast with a cup of coffee.  Who says you can’t have a little rum in the am!? 😉

Rum Cake

1 yellow cake mix (without pudding in mix)
1 3 oz vanilla pudding mix
1/2 cup rum
1/2 cup water
1/2 cup oil
4 eggs
1/2 cup chopped pecans or walnuts

Mix all together, but nuts, for 2-3 minutes. Pour into prepared bunt pan (greased and floured). Add chopped nuts to the bottom of the pan, pour in batter and bake @ 325 for 50-60 minutes.
Glaze
1/2 cup butter
1 cup sugar
1/4 cup rum
1/4 cup water
Boil for 3 minutes. Pour over cake when still in pan and cake still warm from oven. Cool for 30 minutes.
Note: use 3 bananas and banana rum or use chocolate cake mix and chocolate pudding mix. (I’ve had this cake with banana rum and it was… OUT. OF. THIS. WORLD!!!)

As 2011 comes to a close, I encourage us all to remember the things we’re grateful for.  The blessings we’ve received this past year.  The lessons learned.  The family members that have been brought closer together.  New additions.  The friendships that have developed and/or strengthened. The things that had a funny way of just “working themselves out” while we worried.   The things that made us smile or warmed our hearts.  Don’t get caught up in focusing on the negative. Don’t be so quick to close the door an another year passed. Every moment, good or bad, molds us into who we are. Look for the lesson(s) in the hard times and use it to catapult you into better times and a better, stronger you!  Life is missed when you’re too busy looking in the rear-view mirror… 🙂
