Beer Battered Fish & Rings

It’s raining, it’s pouring and the San Francisco 49ers are in the 2012 NFL Playoffs!! YAY!!! Can our “city by the bay” boys take it all the way!? Superbowl party planning is in full swing! Who will it be between?! Oh the anticipation!! Most importantly, what will you be preparing for the big day??

The rain, San Francisco and Superbowl remind me of the burning desire I had to make homemade fish and chips several months ago. Although a little intimidated, I dove in head first,  like how I meet most challenges in life, and just went for it!  My expectations were exceeded by far and my intimidation was completely unwarranted. This recipe was the easiest recipe EVER! Like really, EVER!  The breading on the fish was the perfect consistency – not too thin, not too thick, crunchy and crisp!  The fish was fresh and light. Not oily and heavy. What made this dish even better, my decision to forego the chips and do rings instead!  TOUCH-DOWN!!

Beer Battered Fish

Beer Battered Fish
2 quarts vegetable oil for frying
8 (4 oz) fillets cod
salt and pepper to taste
1 cup all-purpose flour
2 tablespoons garlic powder
2 tablespoons paprika (I used 1 tablespoon paprika & 1 tablespoon Hungarian hot paprika)
2 teaspoons salt
2 teaspoons ground black pepper
1 egg, beaten
1 (12 fluid ounce) can or bottle beer (I used Sierra Nevada)
1. Heat oil in a deep fryer to 365 degrees F (185 degrees C).  Rinse fish, pat dry and season with salt & pepper.
2. Combine flour, garlic powder, paprika, 2 teaspoons salt & 2 teaspoons pepper.  Stir egg into dry ingredients.  Gradually mix in beer until a thin batter is formed.  You should be able to see the fish through the batter after it has been dipped.
3. Dip fish fillets into the batter, then drop one at a time into hot oil.  Fry fish, turning once, until both sides are golden brown.  Drain on paper towels, and serve warm.
NOTE: if making Beer Battered Onion Rings, I used one yellow onion cut into rings and I dipped them in the batter and fried them up before I dipped the fish. Call my crazy, but I’d rather “contaminate” the batter with onion and then dip the fish then the other way around.
